    Spinach Quiche

    Ingredients
    1 unbaked 9-inch pie shell
    1 package (10 ounces) frozen chopped spinach, thawed
    2 Tablespoons butter OR margarine
    1/4 cup chopped onion
    3 eggs, lightly beaten
    1 1/2 cups half-and-half
    1 Tablespoon Worcestershire sauce
    1/2 teaspoon salt
    1/2 cup shredded Swiss cheese
    Paprika

    Directions
    1 Preheat oven to 350 degrees.
    2 Bake empty pie shell 10 minutes.
    3 Drain spinach well.
    4 Heat butter in a saucepan; add onions and spinach.
    5 Cook, stirring occasionally, until onions are translucent.
    6 Stir in eggs, half-and-half, Worcestershire sauce, and salt.
    7 Sprinkle about 2 Tablespoons cheese onto empty half-baked pie shell.
    8 Pour in filling and sprinkle remaining cheese on top.
    9 Dust with paprika.
    10 Bake at 375 degrees 35 to 40 minutes, until a knife inserted in center comes out clean.

    MAKES 6 to 8 servings
