    Spinach Puff

    Ingredients
    4 eggs
    1 cup cottage cheese
    10-ounce package frozen chopped spinach, thawed, drained, pressed
    1/4 cup shredded mozzarella cheese
    2 Tablespoons chopped onion
    1 Tablespoon lemon juice
    1/4 teaspoon nutmeg
    1/4 teaspoon salt
    Grated Parmesan cheese

    Directions
    1 In 5-cup blender container, combine eggs and cottage cheese until smooth.
    2 Add remaining ingredients except Parmesan cheese and blend thoroughly.
    3 Dust 1-quart lightly-greased souffle' dish or straight-sided casserole with grated Parmesan cheese.
    4 Pour egg mixture into dish.
    5 Bake in a 350-degree oven until puffed in center and lightly browned at edges, 30 to 40 minutes.

    MAKES 4 servings
