    Spinach and Cheese-Stuffed Tomatoes

    Ingredients
    6 medium tomatoes
    10-ounce package frozen chopped spinach
    3/4 cup cream-style cottage cheese with chives, drained
    1/4 cup grated Parmesan cheese
    3 Tablespoons fine dry bread crumbs
    1/2 teaspoon dried basil, crushed
    Dash pepper

    Directions
    1 Cut stem ends from tomatoes.
    2 Scoop out and discard pulp, leaving 1/4-inch thick shells.
    3 Salt lightly, invert and drain.
    4 In microwave-safe, 10x6x2-inch baking dish cover spinach with clear plastic wrap, venting one corner.
    5 Cook on HIGH 6 to 8 minutes, stirring once.
    6 Drain.
    7 Stir in cottage cheese, Parmesan cheese, crumbs, basil and pepper; spoon into tomato shells.
    8 Arrange in same dish; cover with plastic wrap and cook on HIGH 3 to 4 minutes or until warm, giving a half-turn once.

    MAKES 6 servings
