Ingredients
1 teaspoon pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon dry mustard
3-1/2 pounds fryer pieces
1/4 cup flour
2-1/4 teaspoons garlic salt
1/4 to 1/2 teaspoon celery salt
1/3 cup shortening or as needed
Directions
1 Combine pepper, poultry seasoning, paprika, cayenne, and dry mustard.
2 Rub mixture on chicken.
3 Coat evenly (for spicy chicken use entire mixture).
4 Combine flour and salts in paper bag.
5 Add chicken, a few pieces at a time.
6 Shake to coat.
7 Heat shortening on medium heat in large heavy skillet.
8 Add chicken and fry 30 minutes, turning every 10 minutes.
9 Increase heat to medium-high.
10 Fry 5 minutes longer or until chicken is no longer pink at bone.
