    Southern-Style Black-eyed Peas

    Ingredients
    1 pound dried black-eyed peas
    1/2 medium onion, diced
    1 medium carrot, thinly sliced
    1 serrano pepper, seeded and thinly sliced, optional
    4 ounces smoke-flavored lean ham, diced
    7 cups water

    Directions
    1 Place all ingredients in a large saucepan or Dutch oven.
    2 Bring to boil and skim off any foam.
    3 Reduce heat to medium-low.
    4 Cover and simmer 2 hours, or until peas are tender.
    5 Serve over hot rice.

    MAKES 4 main-dish servings
