    Sour Cream Muffins

    Ingredients
    2 eggs
    1/4 cup sugar
    1 cup sour cream
    2 cups buttermilk baking mix, such as Bisquick
    1 teaspoon grated lemon zest, optional
    1/2 teaspoon nutmeg
    2/3 cup raisins

    Directions
    1 Heat oven to 375 degrees.
    2 Grease 12-cup muffin pan.
    3 Beat eggs and sugar well.
    4 Blend in sour cream.
    5 Add baking mix, lemon zest, and nutmeg; stir only until evenly moistened.
    6 Fold in raisins.
    7 Distribute batter evenly among prepared muffin cups.
    8 Bake 15 minutes or until browned and a pick inserted in center comes out clean.

    MAKES 12 muffins
