Ingredients
6 fillets sole, flounder, or cod {1-1/2 pounds total}
1/4 cup chopped onion
1 Tablespoon butter
10-3/4-ounce can cream of mushroom soup
1/2 cup light mayonnaise
1/4 teaspoon ground black pepper
1/4 cup diced pimentos
3 cups hot cooked rice
Directions
1 Roll up fillets; secure with wooden picks.
2 Arrange in shallow baking dish.
3 In large skillet, cook onion in butter until tender but not brown.
4 Blend in soup, mayonnaise, and pepper; cook until smooth, stirring constantly.
5 Spoon over fish.
6 Sprinkle with pimentos.
7 Bake at 350 degrees 25 minutes, or until fish just flakes when tested with fork.
8 Spoon hot cooked rice onto a heated platter.
9 Place fish on top of rice, ladle sauce over fish.
