    Smoky Broiled Catfish

    Ingredients
    3 Tablespoons soy sauce
    1 Tablespoon fresh lemon juice
    1/4 teaspoon garlic powder
    2 teaspoons liquid wood-smoke flavoring
    4 catfish fillets

    Directions
    1 In small bowl, combine soy sauce, lemon juice, garlic powder, and liquid wood-smoke flavoring.
    2 Preheat broiler pan for 5 minutes.
    3 Coat pan with shortening spray.
    4 Place catfish on broiler pan.
    5 Brush with mixture.
    6 Broil 3 inches from heat for 4 to 6 minutes, basting occasionally until catfish flakes easily.

    MAKES 4 servings
