Ingredients
Vegetable cooking spray
2 Tablespoons corn oil
1 green pepper, coarsely chopped
1 large onion, chopped
3 cloves garlic, minced
1-1/2 pounds lean ground beef
2 egg whites
3/4 cup old-fashioned oats
3/4 cup barbecue sauce
1 4-ounce can chopped green chilies, undrained
Directions
1 Spray 8-1/2x4-1/2x2-1/2-inch loaf pan with cooking spray.
2 In large skillet heat corn oil over medium heat.
3 Add pepper, onion, and garlic.
4 Saute' 4 to 5 minutes or until tender.
5 Remove from heat.
6 In large bowl, combine ground beef, egg whites, oats, 1/2 cup barbecue sauce, and chilies.
7 Stir in cooked vegetables.
8 Spoon into loaf pan.
9 Bake at 350 degrees for 1 hour.
10 Drain off excess liquid.
11 Invert loaf onto serving platter.
12 Spoon remaining 1/4 cup barbecue sauce over loaf.
13 Let stand 10 minutes.
