Ingredients
2 Tablespoons butter
1 teaspoon curry powder
2 medium bananas
1 pound pork tenderloin, cubed
1/2 cup pineapple juice
1/4 cup minced onion
1/4 cup flaked coconut
2 cup hot cooked rice
Directions
1 Melt butter in large skillet, stir in curry powder until foamy.
2 Cut bananas into 1/2-inch rounds; saute' in curry butter until golden brown.
3 Remove from skillet; set aside.
4 Add pork cubes to skillet and saute' until golden brown.
5 Salt to taste.
6 Stir in pineapple juice and minced onion.
7 Cover and simmer 10 to 12 minutes, until pork is tender.
8 Stir in coconut and rice.
9 Add bananas and toss lightly.
