Ingredients
3 medium red tomatoes, quartered
1 small onion, finely diced
6 ounces plain low-fat yogurt
Pinch of cayenne pepper
1/2 teaspoon ground cumin
2 Tablespoons finely chopped fresh mint OR 2 teaspoons dried mint
Salt and freshly ground black pepper to taste
Directions
1 In a medium-sized serving bowl, combine tomatoes and onion.
2 In a small bowl, combine yogurt, cayenne pepper, cumin, and mint.
3 Mix well.
4 Add salt (about 1/2 teaspoon) and pepper.
5 Pour yogurt mixture over tomato mixture.
6 Toss to blend and serve.
