    Hot German Potato Salad

    Ingredients
    2 slices bacon
    1 Tablespoon oil
    1/4 cup green onion
    1 teaspoon sugar
    1 teaspoon flour
    1/4 teaspoon salt
    1/2 teaspoon Dijon mustard
    Dash pepper
    1/4 cup water
    2 Tablespoons vinegar
    2 cups cubed cooked potatoes
    1/4 cup chopped celery

    Directions
    1 Pan-fry bacon until crisp in large skillet.
    2 Remove bacon; drain on paper towel and crumble.
    3 Reserve 2 Tablespoons drippings.
    4 Add oil to drippings; saute' green onion until soft.
    5 Add sugar, flour, salt, mustard, and pepper; mix well.
    6 Add water and vinegar; cook and stir until mixture thickens.
    7 Add potatoes and celery; mix lightly.
    8 Heat gently until potatoes are thoroughly heated.
    9 Sprinkle crumbled bacon on top.

    MAKES 2 to 3 servings
