Ok, here's a recipe that friends keep asking me to bring to potlucks. They never tire of it, so am passing it along to you. This serves 8, but for a large group you will want to double the ingredients.
Wild Rice/Orzo Salad
1 c. cooked wild rice
1 c. cooked orzo pasta (now that I'm gf, I substitute white basmati rice)
1/2 med. red pepper, diced
1/3 c. sliced olives
1/3 c. chopped sun-dried tomatoes or use fresh
2 T. drained capers
1/4 - 1/3 c. virgin olive oil
1/4 - 1/3 c. balsamic vinegar
1-2 T. chopped basil (use fresh if you can)
1 T. chopped green onion
2 cloves chopped garlic
1/2 tsp.pepper
1/4 c. pine nuts (or pumpkin seeds)
Cook rice and orzo. Drain the orzo. In large mixing bowl, combine rice and orzo and veggies. Set aside.
In a screw-top jar, combine oil, vinegar, pepper and basil (or experiment and add other herbs). Shake well and pour over the combined wild rice and orzo. Toss to coat well.
Cover and chill for at least 4 hours. Stir in nuts right before serving.
