A light as air dessert that is delicious and so easy.

3 tablespoons lime juice
1 tablespoon gelatine
500g natural yoghurt (I use Greek No Fat)
2 tablespoons honey
2 egg whites
2 tablespoons sugar
1 lime, sliced for garnish (I don't bother)

Mix lime juice and gelatine and dissolve by placing over hot water or microwave for 30 seconds.

Combine yoghurt and honey and stir in lime juice mixture.

Beat egg whites until firm, add sugar and continue beating until glossy. Gently fold into yoghurt mixture.

Pour into 4 individual glasses and refrigerate until set.

Garnish with lime slices if desired.
