    Back when I was still doing real cooking, having to stand and cut/peel/slice/dice vegetables made me tired. I sat in my manual wheelchair with a roll-up table where I had cutting board, washed vegetables or fruit, knife and peeler or grater or whatever, and a plastic bag for putting the waste in. I just tossed the peels and other food waste into the plastic bag and didn't ever have to go anywhere until I finished all of the jobs.

    I also had individual plastic bags with ties for each bunch of sliced carrots, diced tomatoes or celery or onion, in case I was going to use them later and wanted to keep them fresh in the refrigerator for a few hours or even a day.
