Ingredients
2 cups mashed, cooked sweet potatoes
1 stick butter or margarine
2 eggs
1 cup sugar
1/2 cup orange juice
Grated rind of 1 orange
1 cup pecans, coarsely chopped
9-inch pie shell, unbaked
Whipped cream, optional
Directions
1 Cream together butter, eggs, and sugar.
2 Mix well into mashed potatoes
3 Stir in orange juice and rind.
4 Stir in pecans.
5 Transfer mixture to unbaked pie shell.
6 Bake at 350 degrees 1 hour and 10 minutes, or until a knife inserted into pie comes out clean.
7 Serve with whipped cream, if desired.
