    Sweet Potato Pie

    Ingredients
    1/4 cup butter
    1 cup dark brown sugar
    1-1/2 cups boiled, mashed sweet potatoes
    1/2 cup applesauce
    2 eggs, lightly beaten
    1/3 cup milk
    1 Tablespoon lemon juice
    1 Tablespoon grated lemon peel
    1 teaspoon vanilla
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    9-inch pie crust, completely baked and cooled

    Directions
    1 In a deep bowl, cream butter and brown sugar until light and fluffy.
    2 Add cooked, mashed sweet potatoes and applesauce.
    3 Add eggs; beat vigorously.
    4 Continue to beat while adding milk, lemon juice, lemon peel, vanilla, nutmeg, and salt.
    5 Continue beating until mixture is creamy and smooth.
    6 Pour mixture into pie crust; bake at 425 degrees 10 minutes.
    7 Reduce temperature to 325 degrees; bake about 35 minutes or until firm.

    MAKES 1 pie
