Ingredients
2 Tablespoons butter OR margarine
4 cups frozen crinkle-cut french fried potatoes
3/4 cup frozen chopped onion
1/2 cup bran flakes
1/2 cup shredded Cheddar cheese
2 eggs, well-beaten
1 cup sour cream
1-1/4 teaspoons salt
1/8 teaspoon pepper
Directions
1 Preheat oven to 350 degrees.
2 In large skillet over medium heat, melt butter; add frozen potatoes and heat 5 minutes, stirring occasionally.
3 Reduce heat to medium, add onion and cook 5 minutes, or until potatoes and onions are browned.
4 Remove from heat; gently toss with bran flakes and shredded cheese.
5 Place mixture in 1-1/2-quart greased casserole.
6 In mixing bowl, beat eggs well; blend in sour cream and seasonings.
7 Pour sauce over potatoes.
8 Bake 20 minutes or until sauce is set but shiny.
