Ingredients
1 cup dry oat bran high fiber hot cereal
1 cup whole wheat flour
3/4 cup all-purpose flour
1/2 cup quick-cooking oats
1 Tablespoon baking powder
1/2 teaspoon cinnamon
2 eggs, lightly beaten
1 cup orange juice
2 teaspoons grated orange peel
1/2 cup honey
1/3 cup oil
1/4 cup skim milk
Directions
1 Heat oven to 400 degrees.
2 Oil 12 large muffin cups lightly.
3 Combine cereal, flours, oats, baking powder, cinnamon, and 1/4 teaspoon salt; mix well.
4 Combine remaining ingredients in medium bowl.
5 Mix until well blended.
6 Stir into dry ingredients until just moistened.
7 Spoon batter evenly into muffin cups, filling almost full.
8 Bake 16 to 18 minutes or until lightly browned and firm to the touch.
