    Missouri Rice-Apple Crisp

    Ingredients
    2 cups cooked rice
    4 apples peeled, cored and sliced
    4 teaspoons lemon juice
    3/4 cup firmly packed brown sugar, divided
    1/2 teaspoon cinnamon
    1/4 teaspoon salt
    3/4 cup all-purpose flour
    6 Tablespoons butter OR margarine
    1/2 cup chopped nut meats

    Directions
    1 In large bowl, combine rice, apples, lemon juice, 1/4 cup sugar, and seasonings.
    2 Spoon into buttered shallow 2-quart baking dish.
    3 Mix flour and remaining sugar.
    4 Cut in butter until mixture is crumbly.
    5 Stir in nut meats.
    6 Sprinkle over rice mixture.
    7 Bake in a 350-degree oven 30 minutes, or until apples are tender.
    8 Serve warm topped with whipped cream, if desired.

    MAKES 6 servings
