    Creamy Lemon Cheesecake

    Ingredients
    1 cup graham cracker crumbs
    1/4 cup sugar
    3 Tablespoons vegetable oil
    3 ounces cream cheese
    2 cups cottage cheese
    2 egg whites
    1/2 cup sugar
    3 Tablespoons fresh lemon juice
    1 teaspoon freshly grated lemon peel
    1 teaspoon vanilla

    Directions
    1 Heat oven to 350 degrees.
    2 Combine graham cracker crumbs. 1/4 cup sugar, and oil in 9-inch pie plate.
    3 Mix well with fork.
    4 Press firmly against bottom and halfway up sides of pie plate.
    5 Blend cream cheese and cottage cheese in food processor or blender until smooth.
    6 Add remaining ingredients.
    7 Blend well.
    8 Pour mixture into crust.
    9 Bake at 350 degrees for 30 minutes.
    10 Turn oven off and allow cheesecake to remain in oven for 5 minutes.
    11 Cool; then chill.

    MAKES 8 servings
