    Chicken Casserole

    Ingredients
    3 cups soft bread crumbs
    1-1/2 cups cut-up cooked chicken OR turkey
    3 Tablespoons butter
    1 onion, chopped
    2 cups sliced mushrooms
    2 ribs celery, sliced
    1 clove garlic, minced
    3/4 cup sour cream
    1/4 teaspoon dry mustard
    10-ounce package frozen chopped spinach, thawed and drained
    3 eggs, separated

    Directions
    1 Heat oven to 350 degrees.
    2 Grease a 2-quart baking dish or casserole.
    3 In a large skillet, melt 1 Tablespoon butter; saute onion, marshmallow, celery, and garlic clove over medium-high heat.
    4 Mix 1-1/2 cups bread cubes with chicken, sour cream, sauteed vegetables, mustard, spinach, and egg yolks.
    5 Beat egg whites until stiff but not dry.
    6 Fold into chicken mixture.
    7 Turn into baking dish.
    8 Toss remaining bread crumbs with 2 Tablespoons melted butter.
    9 Sprinkle over chicken.
    10 Bake uncovered about 45 minutes or until center is set and top is golden.

    MAKES 6 to 8 servings
