Ingredients
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1-1/2 teaspoons cinnamon
1/2 cup sugar
3-1/2 cups bran flakes cereal
1-3/4 cups skim milk
2 egg whites
3 Tablespoons vegetable oil
1-1/2 cups fresh or frozen blueberries, unthawed
Directions
1 Stir together flour, baking powder, salt, cinnamon and sugar.
2 Measure bran flakes cereal and milk into large mixing bowl.
3 Stir to combine.
4 Let stand 2 minutes or until cereal is softened.
5 Add egg whites and oil.
6 Beat well.
7 Add flour mixture, stirring only until combined.
8 Gently stir in blueberries.
9 Spoon batter into twelve 2-1/2-inch muffin-pan cups coated with cooking spray.
10 Bake at 400 degrees 23 minutes or until light golden browned.
