Ingredients
1 pound lean ground beef
2 large baking potatoes
1/2 cup chopped onion
1 cup prepared medium salsa
1/2 cup shredded Cheddar
1 green onion, sliced
Directions
1 Scrub potatoes; pierce each with a fork.
2 Microwave at HIGH 8 to 10 minutes or until tender.
3 Let stand 5 minutes.
4 Cook ground beef and onion in nonstick frying pan over medium heat until browned.
5 Pour off drippings.
6 Add salsa; stir to combine.
7 Continue cooking 3 to 4 minutes.
8 Cut potatoes in half lengthwise; break up and fluff pulp with fork.
9 Spoon an equal amount of cheese and garnish with green onion.
