    Asparagus Tart

    Ingredients
    1 sheet frozen puff pastry, thawed
    1 Tablespoon butter
    1 Tablespoon flour
    2 Tablespoons milk
    1-1/4 cups half-and-half
    2 teaspoons dried tarragon
    1 Tablespoon lemon juice
    salt and pepper, to taste
    1 pound fresh asparagus
    1/2 cup shredded Swiss cheese

    Directions
    1 - Preheat oven to 400 degrees.
    2 - Roll out pastry; line 9-inch pie pan.
    3 - Prick with a fork; bake 12 minutes.
    4 - Melt butter in saucepan.
    5 - Stir in flour; cook over medium-low heat, stirring, 1 minute.
    6 - Stir in milk and a little half-and-half; add half-and-half until all is accommodated and mixture is smooth and thickened.
    7 - Stir in tarragon, lemon juice, salt and pepper.
    8 - Steam asparagus over boiling water until bright green and just tender, 8 to 9 minutes.
    9 - Arrange asparagus in tart shell, cover with tarragon sauce and sprinkle with cheese.
    10 - Bake 15 minutes.
