Ingredients
2-1/2 to 3 pound chicken, cut up
3/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
2-1/2 cups chicken broth
1 cup uncooked rice
1 onion, chopped
2 cloves garlic, crushed
1-1/2 teaspoons chopped oregano leaves
1 bay leaf
10-ounce package frozen green peas, thawed and drained
Directions
1 Heat oven to 350 degrees.
2 Place chicken, skin side up, in ungreased 13x9x2-inch baking pan.
3 Sprinkle with salt, paprika, and pepper.
4 Bake uncovered 30 minutes.
5 Heat broth to boiling.
6 Remove chicken from baking dish; drain fat from baking dish.
7 Mix broth, rice, onion, garlic, oregano, bay leaf, and peas in baking dish.
8 Top with chicken.
9 Cover with aluminum foil and bake 30 minutes or until rice and thickest part of chicken are done and liquid absorbed.
10 Remove bay leaf.
