    Applesauce Pound Cake

    Ingredients
    16-ounce package pound cake mix
    1 cup unsweetened applesauce
    1 egg
    1/2 teaspoon rum extract

    Directions
    1 Preheat oven to 350 degrees.
    2 Lightly grease bottom of 9x5x3-inch loaf pan.
    3 Stir together pound cake mix, applesauce, egg, and extract in small mixing bowl.
    4 Beat 2 to 3 minutes with electric mixer until well-blended.
    5 Pour into prepared pan.
    6 Bake 1 hour and 5 minutes or until cake is golden brown and top springs back when touched.
    7 Cool 15 minutes before loosening around edges and removing from pan.

    MAKES 1 loaf
