    EGGPLANT CURRY

    We tried this tonight, it was good!

    tbsp olive oil
    1/4 cup coconut oil
    6 cloves garlic, minced
    1/2 large onion, sliced thin
    6 oz button mushrooms, sliced
    1 Chinese eggplant, cubed in 1 in dice
    2 tomatoes, diced
    fresh basil leaves (5)
    dried basil, ginger powder, turmeric powder, garam masala, chile powder, thai basil leaf, curry, salt, Braggs Liquid aminos,
    1/2 can trader joe's coconut cream

    Saute garlic and onion in olive oil, add rest of vegetables and coconut oil, saute until vegetables are soft. Add coconut cream and adjust seasonings to taste.

    Serve over short grain brown rice. Enjoy
