    Grits Scrapple

    Ingredients
    5 cups water
    1 tsp salt
    1 cup regular grits
    1 cup minced cooked ham or pork
    all-purpose flour
    Hot salad oil

    Directions
    1-Combine water and salt in a large saucepan; bring to a boil.
    2-Slowly stir in grits; return to a boil and cook 2 minutes, stirring constantly.
    3-Add meat, mixing well.
    4-Spoon into a greased 9-1/4x5-1/4x2-34-inch loaf pan, packing well.
    5-Chill at least 4 hours or overnight.
    6-Cut into 1/2-inch slices.
    7-Coat with flour, and fry in 1/2-inch hot oil until lightly brownish, turning once.

    Yield: 4 to 6 servings
