Ingredients
1 pound lean ground beef
1 medium onion, finely chopped
1 small green pepper, finely chopped
1 tsp chili powder
1 tsp taco seasoning
1/2 tsp salt
1/2 tsp sugar
1/4 tsp ground black pepper
1 small garlic clove, crushed
2 cans (8oz) tomato sauce
cornbread batter{from scratch or box cornbread mix}
1/2 cup grated Cheddar cheese
1/4 cup sliced pitted black olives
Directions
1-Preheat oven to 400 degrees F.
2-Oil a 1-1/2 to 2 quart casserole.
3-In skillet, cook ground beef, onions, and green pepper until meat loses its pink color.
4-Break meat up with a large spoon as it cooks.
5-Pour off excess fat, as necessary.
6-Add chili powder, taco seasoning, salt, sugar, pepper, garlic and tomato sauce to meat mixture.
7-Heat to boiling, stirring.
8-Reduce heat and simmer 10minutes, uncovered.
9-Pour mixture into casserole dish.
10-Make up cornbread from scratch or use a package of cornbread mix.
11-Pour over top of meat mixture.
12-Bake casserole for about 25 to 30 minutes, or until cornbread topping is beginning to brown.
13-Garnish top with grate cheese and sliced, pitted olives.
