    Broccoli Bacon Salad

    Easy, cool and tasty too!
    This recipe makes a lot – adjust volume to your need.

    Ingredients:
    2 bunches broccoli, florets only (5 to 6 cups florets)
    1 medium red onion, chopped
    1/2 cup raisins – optional (but the sweet adds to the salad) – dried cranberries or cherries are yum too and add a flash of colour).
    10 to 12 slices bacon, fried and crumbled

    Dressing:
    1 cup mayonnaise
    2 tablespoons balsamic vinegar
    2 teaspoons sugar


    Cut the raw bacon into ¼ or ½ inch pieces and fry ‘em up; make it crispy. Remove from pan and put into paper towel to help drain off excess fat.

    While the Bacon is cooking, wash and separate the Broccoli florets - lightly steam (just enough to bring out the colour and retain the crispness – maybe 3 minutes)
    Plunge Broccoli into cold water or under cold running water to stop cooking process and to help cool. Set aside.

    Prep the onion – I like thin sliced quarter circles, but you can chop it however you like.

    In a large bowl, mix the Mayo, vinegar and sugar. Add the onion and mix it up.
    Add the cooled Broccoli – mix, add the bacon and raisins - mix.

    Cover and let rest in fridge at least 2 hours.
