Montezuma's Revenge Vegetarian
Chop Suey

(This is a ONE POT meatless
American chop suey)

Servings: 2

1/2 cup elbow macaroni
olive oil
1/4 cup bell pepper, diced
1/2 cup onion, diced
1 cup dried, black-eyed peas
1 fourteen ounce can diced tomatoes
1/2 can of Hunts (no sugar added) spaghetti sauce
garlic, minced (use amount to your personal preference)
traditional Italian spices
grated cheese

Cook macaroni, according to package directions. Drain and set aside. Saute diced onion, diced bell pepper and garlic in a small amount of olive oil. Using the same pan, add dried, black-eyed peas and 2 cups of water. Simmer, covered, 30 to 45 minutes. When black-eyed peas are just plump, add can of diced tomatoes and the spaghetti sauce. Simmer a few minutes longer and season with Italian spices.

Stir in cooked macaroni. Top with grated cheese, to your personal liking.

NOTE: This meal requires a little familiarity with dried, black-eyed peas. They cook up fast and will go from plump to mush quickly. They are cheaper than textured vegetable protein and cook in roughly the same time. And, they taste better than soy products. Dried, black-eyed peas should be checked occasionally both for doneness and need for added water.

This is a vegetarian meal that even a devoted meat eater will enjoy!
