Orange Roughy

submitted by Samantha Lankford,
aka samanthalynn

3-4 pieces of orange roughy or talapia (can even be still frozen, just add 5-10 mins onto cooking time)
1 or 2 cups of frozen veggies  (I mix cauliflower, broccoli, and carrots)
onion powder
garlic powder
hot paprika
lemon juice (from that little lemon shaped bottle)
few chunks of butter or butter flavored spread

Preheat the oven to 350°.  In a 9x13 baking dish (or what ever size fits your needs) line fish in a single layer in the middle of the dish.

Arrange the veggies around the fish. (if some of the veggies are on top of the fish it is just fine)  Squirt with lemon juice, sprinkle onion powder, garlic powder, and paprika over the veggies and the fish,
then put a few chunks of your butter flavored spread on top. (just for flavor)

Bake in the oven for 20-35 mins. (cooking time depends on if you are using fresh or frozen fish and your oven)
