Gloria's Molasses Cookies
from the kitchen of Gloria, aka Glo

These cookies "crack" just like they are meant to
and taste wonderful
Using canola oil and egg whites
keeps the fat and cholesterol content low.
To cut the fat even more,
modify as instructed below.

Yield: 38 cookies
 

Ingredients:

¾ cup canola oil
1 cup sugar 
¼ cup molasses
2 egg whites
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon 
½ teaspoon cloves 
½ teaspoon ginger 
¼ teaspoon salt
Granulated sugar

Cream oil and sugar, by blending together with a fork.
Add molasses and egg whites and beat well.
Mix together flour, baking soda, cinnamon, cloves, ginger and salt.
Add to molasses/egg white mixture.
Mix well.
(Chill for an hour or two, so dough is easier to work with.)

Form into one-inch balls (about the size of a walnut).
Roll each ball in sugar and place on ungreased cookie sheet, about two inches apart.
DO NOT PUSH BALLS DOWN TO FLATTEN as they will flatten and crack nicely in the oven.

***MODIFICATION: To cut the fat even more, alter the recipe by using ½ cup of canola oil and ¼ cup of applesauce. You must then use 3 cups of flour, instead of two cups.
These cookies will rise higher and don't crack quite as nicely, but the taste is still very good. ***

Bake in 350ºF oven for 10 to 12 minutes
