Cabbage Surprise

2 - 4 Tbs olive oil
1 lb ground turkey or beef
1 lg head of cabbage
2 pks Oriental or Beef flavored Ramen Noodles
  (broken into small pieces)
1 16oz bag frozen broccoli, cauliflower, and
  water chestnuts (may have carrots instead of
  cauliflower)
1 can bean sprouts
1 pkg portabella mushrooms, sliced
8 Tbsp soy sauce
1 bag Chinese noodles (chowmein) or
  sesame seeds

Core and clean cabbage; slice into shreds.

In large skillet add olive oil and cabbage (sill wet).  After this cooks down a few minutes add frozen veggies.  Add 4 Tbs of soy sauce; cover and stir occasionally.  After cabbage cooks down and veggies are done remove the lid and let
liquid cook up.

In medium skillet brown ground meat, then add mushrooms and stir.  Cook them down a bit and add remaining soy sauce and bean sprouts.  Let this simmer til liquid is almost gone.

In 2qt pot boil water and cook Ramen Noodles as pkg directs.  Drain and stir in seasoning packet.

After all ingredients appear to be well cooked (cabbage will cook down a lot), mix all together in LARGE bowl and serve.  I like to add sesame seeds or Chinese noodles to mine, for a little crunch.

This makes A LOT, but is great for leftovers.  Takes about 30 - 45 minutes from prep to finished supper.
