Fireman's Meatloaf

submitted by Marley
(Marley succumbed to cancer in 2005
and was a regular chatter on MSWorld. She is missed.)

2-3 lbs. Ground Beef
½ Chopped onion
½ Chopped bell pepper
4 - 5 crackers, crushed
1 egg
1 Cup Mozzarella Cheese
1 Cup chopped ham

Blend meat, onion, pepper, egg and cracker crumbs together.

Place ½ meat mixture in pan.  Pat together shaping into meatloaf.  Put divit (indent) in center of meat and place ham and cheese in.

Place remaining meat on top. Pat together making sure there are no cracks for cheese to ooze out.

Bake at 375ºF until brown. (Approx. 1 hour).

You can use ketchup or BBQ sauce on top last 5 minutes of cooking.

It tastes just like pizza.

I usually make salad & bread sticks with this.
Kids love it and it is really easy if you have company.
